- Комнатной температуры яичные белки дадут безе больший объем и помогут сахару легко раствориться.
Тонкая пудра будет растворяться более легко, чем обычный гранулированный сахар. Если у вас нет каких-либо приспособлений в вашей кладовке, просто взбейте обычный сахар в кухонном комбайне… - Для идеального безе, добавляйте пудру медленно. Не торопите процесс.
Убедитесь, что ваша миска для смешивания и миксер тщательно очищены. Ни капли желтка! иначе попадание желтка не позволит белкам правильно вспениться. - Разбивайте яйца на плоской поверхности (не об край вашей миски) и отделяйте белки от желтков холодными (прямо из холодильника).
- Также разумно не разделять их над миской с белками, так как это почти всегда гарантирует, что маленький желток загрязнит другие белки, и вам придется начинать все сначала!
- Чтобы сохранить безе идеальный чисто-белый цвет, добавьте немного ванили.
- Духовка должна быть предварительно нагрета до 150°C, и убедитесь, что вы не собираетесь использовать ее для чего-либо еще, так как безе остаются в духовке, пока полностью не остынут, то есть они частично запекаются, а затем медленно высыхают.

- 4 шт Яиц
- 1 ст. л. Пудра Swerve или сахарная пудра 2 ст. л.
- 1 ч. л. Ванильный экстракт или ванилин 2 г
- 1 щепотка Соли
- Орехов для украшения по желанию

- В глубокую миску выкладываем белки, предварительно отделив их от желтков.
- Добавляем щепотку соли и взбиваем до появления "жестких пиков".
- Пудру постепенно добавляем к белкам. Взбиваем ещё минуту.
- Разогреваем духовку до 150 градусов С.
- Противень застилаем пергаментной бумагой.
- Затем выдавливаем белковую массу на противень либо шприцем, либо специальным кулинарным мешком. У кого нет, то можно просто ложечкой, смоченной в воде.
- Кто желает, может посыпать измельченными орехами.
- Противень ставим в духовку и выпекаем примерно 45 мин. Затем выключаем плиту, слегка приоткрываем и ждем еще 15 мин..
- Выкладываем безе на решетку до полного охлаждения.
- Достаем противень, перекладываем готовые пирожные безе в вазочку и подаем к чаю. Приятного аппетита!
