Продолжим серию Средиземноморских блюд… Кале со свининой – это запеченная свиная грудинка с тушеной краснокачанной капустой. Такая капуста чрезвычайно питательна, вкусна и полезна не только нам, худеющим по правилам низкоуглеводной диеты. И это блюдо станет украшением и стильным дополнением к любому праздничному столу!
Рекомендовано на 2 этапе Кремлевской диеты.

Ингредиенты
- 1 кг Свинины (грудинка)
- 0,6 кг Капусты краснокочанная (примерно пол-кочана)
- 1/2 ч.л. Семян фенхеля
- 2 ч.л. Уксуса красный винный
- 2 шт Лука репчатого
- Масла растительного для жарки
- Соли по вкусу
- Перца черного молотого по вкусу
Порции: порции
Инструкции
- Свиную грудинку моем и просушиваем.
- Натираем мясо со всех сторон солью (чуть-чуть), перцем и посыпаем фенхелем.
- Лук чистим и нарезаем крупными кольцами.
- Небольшой противень с высокими бортами смазываем маслом и выкладываем на него грудинку. Вокруг грудинки выкладываем лук. Сверху сбрызгиваем маслом. Лук можно смазать маслом кулинарной кисточной, чтобы он красиво карамелизавался.
- Отправляем в разогретую до 220 градусов духовку на сорок минут.
- Пока мясо запекается, готовим капусту. Для этого:
- Капусту шинкуем.
- Разогреваем сковороду, наливаем в нее масло и выкладываем нашинкованную капусту.
- Обжариваем на среднем огне пять-семь минут. Затем чуть-чуть солим (капуста соль НЕ любит!), добавляем уксус, перемешиваем, закрываем крышкой и тушим до готовности. Обычно: минут пятнадцать-двадцать. Не забывайте помешивать и НИ В КОЕМ случае не добавляйте воду!
- По истечении времени, достаем противень с готовым мясом. Режем мясо на порционные куски.
- В порционные тарелки выкладываем: капусту, сверху - колечки лука, сверху - кусочки мяса и подаем к столу. Приятного аппетита!
Примечания для рецепта
Вместо краснокачанной капусты вполне можно использовать и обычную белокачанную.
